Oven-roasted Irish fry up for a hearty breakfast
An Irish fry up in the morning and sitting down to a full plate of sausages, black pudding, bacon, eggs, tomatoes, mushrooms and beans on toast is the perfect start to any day. It will provide you with the energy you need, whether you are working in the garden, tending to animals or building your next DIY project.
Is there anything so hearty and nourishing that can keep your energy up for so long as a good old fashioned Irish fry up? I think not. A fry up, no matter if it is Irish, English, Scottish or Welsh, is something quite special. It can calm down an upset stomach or rejuvenate you when you’re feeling worn out, and it will keep you satiated and full of energy for the rest of the day.
It is the breakfast we choose in our family for those days that we know that we will be hiking in the mountains all day. Because it will ensure that all of us will be able to enjoy the hike without feeling tired or hungry after an hour or two.
A fry up also doesn’t have to be a lot of work, nor does it have to mean that you have to stand at the stove the whole time. Because with this recipe, I will show you how you can roast your entire breakfast in the oven so that your hands are free to do other things. Like getting the tools out of your shed for your big day of work in the garden or getting a backpack together filled with things for your hike.
Tips for roasting a delicious and hearty breakfast
If you are making a fry up just for yourself and you are wondering what to do with all the extra sausages, bacon and black pudding you have on hand. Then I would recommend dividing them up into portions and placing them in freezer-safe containers. So 1 sausage, 1 slice of bacon and 2 slices of black pudding can go in 1 freezer bag or container. That way, you can take your container out of the freezer the night before and defrost it in the fridge. Ensuring that you have the exact amount of meat items that you would need. Then all you need to do is add in the tomatoes, mushrooms, egg and baked beans with your toast.
I love making this oven-roasted fry up in a good heavy cast-iron skillet. Since it will ensure that everything browns and caramelises better than they tend to do in a regular baking tray.
This is because cast iron can hold such an incredible amount of heat. And because it is naturally non-stick, I also don’t have to worry about my food sticking. Although you can always add a bit of butter or olive oil if you are afraid of things sticking to the bottom.
Although a hot skillet, when properly seasoned, will never have things stick to it. How to make an oven-roasted fry up:
The ingredients for this recipe are for one person. That way, you can multiply all the ingredients for however many people you make this delicious fry up.
Feel free to swap out certain aspects of the fry up if you prefer an alternative. I went with the traditional combination, but if you prefer rashers instead of bacon or onions instead of mushrooms or want to omit the black pudding. Feel free to do so. Just keep in mind that you will have to take the changed ingredients and their cooking time into account.
Makes: 1 hearty breakfast
Prep: 5 min
Roasting time: 25 min
Ingredients:
- 1 to 2 pork sausages of choice
- 1 to 2 thickly cut bacon
- 2 slices of black pudding, white pudding or both
- 1 to 2 sliced salad tomatoes or a handful of cherry tomatoes
- 1 to 3 sliced medium button mushrooms or a handful of baby button mushrooms
- 1/2 cup or half a tin of baked beans in tomato sauce
- 1 egg
- a drizzle of olive oil
- salt & pepper to taste
- 1 to 4 slices of toast (ideal with homemade sourdough toast)
- dash of brown sauce for serving if desired
Preparation:
Preheat your oven to 180 C or 360 F for at least 15 minutes with your cast iron skillet in the oven. If you don’t have a cast-iron skillet, you can also use a regular baking tray.
To prepare your ingredients slice your tomatoes, mushrooms and black or white pudding into thick slices.
Cover your sausages, bacon, tomatoes and mushrooms with some olive oil and sprinkle with salt and pepper. Then set them aside till you need them.
Once the oven and your skillet are preheated, you can add in your sausages and pop it back into the oven. For 5 minutes if using thin sausages or for 10 minutes if using regular size sausages.
After the first 10 minutes (or 5 if roasting thin sausages) you can add your bacon to your skillet and leave it to roast together with the sausages for an additional 5 minutes.
After the 5 minutes are up, you can add the rest. Add the tomatoes, mushrooms, and black or white pudding to your skillet.
Your baked beans in tomato sauce can be placed in an ovenproof bowl or ramekin and set either in or next to your skillet.
Crack your egg into your skillet carefully if you like your egg sunny side up. If you are afraid your egg might stick to your skillet, you can add another dash of olive oil. If you prefer your egg with a runny yolk, then add it 3 to 5 minutes before your timer runs out.
Roast everything together for an additional 10 minutes.
Serve with some warm toasted sourdough bread, a cup of breakfast tea and a dash of brown sauce if you have it.

This is amazing!!! A couple of years back I went to Ireland on a trip and had my very first full Irish breakfast at my B&B. It was delicious and I really wanted to be able to enjoy a good full Irish breakfast more often, but I find it so much work to fry everything on the stove.
