An Irish fry up in the morning and sitting down to a full plate of sausages, black pudding, bacon, eggs, tomatoes, mushrooms and beans on toast is the perfect start to any day. It will provide you with the energy you need, whether you are working in the garden, tending to animals or building your next DIY project.
Preheat your oven to 180 C or 360 F for at least 15 minutes with your cast iron skillet in the oven. If you don't have a cast-iron skillet, you can also use a regular baking tray.
To prepare your ingredients slice your tomatoes, mushrooms and black or white pudding into thick slices.
Cover your sausages, bacon, tomatoes and mushrooms with some olive oil and sprinkle with salt and pepper. Then set them aside till you need them.
Once the oven and your skillet are preheated, you can add in your sausages and pop it back into the oven. For 5 minutes if using thin sausages or for 10 minutes if using regular size sausages.
After the first 10 minutes (or 5 if roasting thin sausages) you can add your bacon to your skillet and leave it to roast together with the sausages for an additional 5 minutes.
After the 5 minutes are up, you can add the rest. Add the tomatoes, mushrooms, and black or white pudding to your skillet.
Your baked beans in tomato sauce can be placed in an ovenproof bowl or ramekin and set either in or next to your skillet.
Crack your egg into your skillet carefully if you like your egg sunny side up. If you are afraid your egg might stick to your skillet, you can add another dash of olive oil. If you prefer your egg with a runny yolk, then add it 3 to 5 minutes before your timer runs out.
Roast everything together for an additional 10 minutes.
Serve with some warm toasted sourdough bread, a cup of breakfast tea and a dash of brown sauce if you have it.
