I love a good hearty warming root vegetable soup, after having worked in the garden on a chilly autumn afternoon. There is nothing better than coming inside to a delicious and warming soup. Filled with a wide array of hearty winter root vegetables, it is a delicious and no-fuss recipe, sure to be a favourite.

Golden potato soup recipe

The Irish are famous for their potatoes, this mainly due to the great hunger but still. And I definitely love myself some good potatoes, whether they’re boiled, fried, or roasted. But one of my favourite ways to eat potatoes is in soups. The humble potato who is so good at making oneself feel warm and comforted is the perfect ingredient for a soup, which tends to have the same effect.

Homemade pizza

Who doesn’t love pizza, I know my family and I love pizza. Its cheesy bready saucy goodness can make anyone feel better. And when made from scratch, it can be considered a semi-healthy dinner. Because it does contain quite a lot of tomatoes, and you can even top it with even more vegetables to make it somewhat healthier.

Savoury, comforting cheesy goodness. This cauliflower pie is the perfect dish to eat when you want some comfort food. When I was just a small child, we would have vegetarian Mondays. And this pie was one of my all-time favourites. It has everything you could want: cheese, eggs, milk, pastry and cauliflower.

Vegetarian broccoli au gratin

This lovely vegetarian dish is one of my favorite childhood dishes, we almost ate it every fortnight. One of our dear friends was vegetarian and came for dinner every Monday evening. My mother, who grew up with the standard Dutch dinners of potatoes, veggies, and some meat on the side, found it challenging at times. So she tried her best to find as many vegetarian dishes as she could. Some were almost inedible, but most were just beyond tasty. And out of all those dishes, this broccoli gratin is my all-time favorite.

Rich French traditional onion soup

Maybe one of the simplest soups, but because of its simplicity, you want to take extra care when making it. Since the main ingredient are onions and you don’t add much else in great proportions, you can’t hide behind other grand flavours. So you want to properly caramelize the onions to get that delectable balance between savoury and sweet. To add just that extra bit of oomph, I like to add some Marmite, it seems to enhance the flavour of the onions.
