Soft and chewy cookies
These cookies are a breeze to whip up, all you need is a spoon and bowl. My eldest regularly makes them all by herself, and only needs me to put them in and take them out of the oven. She loves them so much in fact, that she is already daydreaming about teaching her hypothetical children how to make them.
Chocolate chips?
Even though I use chocolate chips most of the time, doesn’t mean you can only fill them with chocolate. I also like to make them with 50% old fashioned oats and 50% raisins, for a somewhat healthier cookie. Actually, my all-time favourite is a combination of white chocolate and chopped walnuts. So what are some combinations that I would recommend:
- Milk chocolate and hazelnuts
- White chocolate and walnuts
- Or just any type of chocolate with any kind of nut
- A mixture of white, milk, and dark chocolate
- Oats and raisins
- Oats and nuts
- Fudge pieces, possibly with chocolate
- Any kind of fruit
So no matter what flavour you prefer, I’m sure there is something in there for you.
Cookies into the oven
The cookies will puff up while in the oven and start to deflate once you take them out of the oven. One of my absolute favourite things about baking is sitting in front of the oven while they are baking. To see your cookie dough expand, set and puff up, is one of those small miracles of life that always amazes me.
Then once you take them out of the oven and you can smell them and see them deflate, you can feel your mouth watering. I always burn either my fingers or my tongue since I can never resist straight from the oven hot cookies. It’s not the easiest thing to eat since they tend to fall apart if you move them before they’ve cooled. But I can’t think of anything more delicious.

Quick and easy chocolate chip cookies
Ingredients
- 150 gr flour plain
- 90 gr oil vegetable or sunflower
- 50 gr caster sugar
- 40 gr soft brown sugar
- 50 gr white chocolate chips or chocolate of choice
- 50 gr chopped walnuts or nuts of choice
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
Instructions
- Preheat the oven to 190 C.
- Add the oil and both sugars to a medium bowl and with a sturdy spoon beat till nicely combined.
- Mix in the egg and vanilla extract, and beat with the spoon.
- Sift in the flour and baking powder and mix until well incorporated.
- Lastly add in the chopped chocolate and nuts making sure that they are well distributed into the mixture.
- Using 2 teaspoons, make piles of two teaspoons big on a baking sheet, while making sure to leave enough room between the cookies. You should be able to make 15 to 20 cookies depending on your spoon size.
- Bake in a preheated oven for 8 to 10 minutes, or until cooked on the sides and slightly doughy in the middle.
